Coconut Ice Cream

I insisted we needed an ice cream maker on our wedding registry. Think of all those fancy dinner parties we were going to have as as a married couple & how dare we serve store bought ice cream as dessert?!

Needless to say I have barely used it, which is silly because ice cream is so easy to make. So I’ve decided this will be the summer of making frozen treats & proving that indeed, this was a wise addition to the registry.

{Bonus- I marked my first thing off my 30 before 30 list!}


an ice cream maker

1 cup heavy cream

1/2 cup milk

1/2 cup coconut flakes

8oz. can of cream of coconut

Blend the milk & cream of coconut in a food processor & when smooth stir in the heavy cream & coconut flakes. Transfer the mixture into the ice cream maker & follow the manufacturer’s instructions.

{Mine were to pour the mixture into the already frozen bowl & stir for 20 minutes.}

I mean, really. How much simpler can you get? You just blend things- my kind of cooking!

Unless you pour the mixture into the blender & then discover the blender is leaking. All over the counter.  That puts a damper on things for a bit but luckily I managed to recover & make the ice cream in three small batches in our small food processor.

{There may have been some cussing.}

I’m hoping to bake a little something to serve this with (and bring in some color!) so will share that when I get to it 🙂

    I had coconut ice cream this weekend at an ice cream stand. You might like their idea…they called it almond joy. It had chocolate and almond pieces in it and was very good. I keep looking at the ice cream makers but haven’t bought one as yet. It would be something else that I would have to find room for at our summer cottage which doesn’t have a lot of extra storage.

  2. I have one of those same ice cream makers and have barely used it. I have got to dust it off and get cranking!!! And, coconut ice cream….oh yes, that will be my first batch!

    Yum! That looks delicious. I’ve never made homemade ice cream (besides the can and salt method in elementary school), but I’m afraid it would become habit. 😉 Have you seen the Jeni’s Splendid Ice Creams book? Jeni’s is local gourmet ice cream here in Cbus, but you can find it all over the country in specialty shops (like Dean & Deluca in Georgetown!). If you’re looking for recipes, that’s a great place to check out next.

  5. YUM! I would slather this in chocolate at the end. Coconut has such a great texture in ice cream.
