Last night we celebrated Fat Tuesday in style!
We were having friends over so I was determined to make jambalaya. And while it wasn’t as good as the real thing I was pleasantly surprised by how well my husband and I did!
The recipe was fairly simple but our secret ingredient was Voodoo Mix.
What is Voodoo Mix, you ask?
Well, I’m not entirely sure either but its a delicious blend of spices we got on our trip to New Orleans.

- Place the olive oil in a medium-to-large casserole or dutch oven
- Add the onions ,bell pepper and sausage, sprinkle with salt and pepper, and cook, stirring occasionally, until the onion softens and just begins to brown, about 10 minutes. Meanwhile, warm the stock in a small saucepan over medium heat.
- Stir in the rice, with the spices (can use garlic, cayenne pepper, thyme), then the stock. Bring to a boil, turn the heat to medium, and cook, uncovered, stirring occasionally, until the rice is tender and the liquid just about absorbed, about 15 minutes.
- Stir in the chicken and cook for 30 minutes.
